Another great way to use lots of zucchini~
Add shredded zucchini to scrambled eggs!
makes 2 servings
2 C shredded zucchini
1/4 large white onion, chopped
1 large slicing tomato or 1/2 C cherry tomatoes
2 tbs milk
1/4 C romano cheese
salt and pepper to taste
1. Saute shredded zucchini and chopped onions in olive oil
2. Beat together eggs, milk, salt and pepper and add to pan
3. Add tomatoes and romano cheese (kale and spinach are also a great addition here too)
4. Serve with our without your favorite toast
I make a different variation of this recipe almost daily, so don't be afraid to experiment with different ratios and ingredients!
